Gluten Free Carrot Cake



ingredients:

     4 eggs
     3 large carrots
     1 and 1/2 xic. sugar
     1 xic. Canola oil
     1c. Coffee xanthan gum
     1 xic. rice cream
     1 xic. rice flour
     1c. yeast soup

Preparation:

     In blender beat the first 5 ingredients. Transfer to a bowl and beater go mixing others. Place in greased and floured form, bake in pre-heated oven medium for about 40 min. Test Stick.
     coverage:
      Each makes your taste ... usually I use what I have at home. For this, a piece of melted milk chocolate, I added 2 tablespoons light sour cream and 1/3 of the can of condensed milk ... I put 1 more min in the microwave to cook lightly and go! It was quite hot. Makes a great cake.
